I bought the grill already put together so cannot comment on that, but I did have to put together and install the sidefire box. I also bought the side fire box which is great for smoking and grilling small amounts of food. The grill provides even cooking and we have not had a problem with the grill cooling off too soon. Also, the charcoal tray allows for easy cleanup. The grates for the grill are sectioned so you can move one or two if you need to get under them vs moving a single piece grate.

My preference is to use a few water baths above the fire and below the meat, plus have some form of barrier to prevent direct heat from the the coals to the meat. Have a look at the various set ups you can find online. Temp control isn't as stable as a good, dedicated smoker but it works well enough to learn on and you will get used to it. I've smoked ribs, chickens, wings, pork butts etc etc in one. A Weber kettle would be absolutely ideal then imo.
